Raw oysters with Mignonette Sauce

I love oysters!  And on Sunday we were able to get some delicious fresh oysters from Pike Street Market in Seattle.  All I can say is that they were delectible!  We chose to eat these raw, although we often put them on the grill until the shell just opens, fry them, or make bisque.

We served these with sliced lemon, Tabasco, shredded fresh horseradish, and Mignonette Sauce. My preference, for raw oysters, is a drizzle of Mignonette Sauce with a sprinkle of the horseradish.  There are lots of different recipes for Mignonette Sauce. This is mine. It’s very simple!

Mignonette Sauce

In a small jar, mix:

  • 1/2 cup red wine vinegar
  • 1/2 cup champagne vinegar
  • 1 tablespoon rice vinegar
  • 1/4 cup chopped shallots
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
